Brewing Guide

Peaberry Coffee Brewing Guide

Peaberries are naturally smaller, denser beans that require slight adjustments to standard brewing methods. Their concentrated flavor profile and unique density demand precision for optimal extraction.

Grind Size & Consistency

Use a medium-fine grind, slightly finer than standard coffee but coarser than espresso. Peaberries' density means they extract more slowly—finer grinds compensate without over-extraction. Invest in a burr grinder for uniform particle size; inconsistent grinds lead to uneven extraction and muted complexity.

Water Temperature & Timing

Brew at 195–205°F (90–96°C). Peaberries benefit from slightly hotter water due to their density. For pour-over methods, extend brew time by 15–20 seconds beyond standard protocols. For immersion methods like French press, use 4–5 minutes rather than the typical 3–4.

Brewing Methods

Pour-Over: Use a 1:16 coffee-to-water ratio. The slower flow rate through denser peaberries ensures full extraction of their bright, concentrated notes.

French Press: Steep 4–5 minutes, then plunge slowly. Peaberries' oils and body shine in immersion brewing.

Espresso: Tamp with 10–15% more pressure than standard beans. Adjust shot time to 27–30 seconds; peaberries often pull slightly longer.

AeroPress: Extend steep time to 2 minutes before pressing. The pressure method highlights peaberry's sweetness and clarity.

Storage & Freshness

Store in an airtight container away from light, heat, and moisture. Peaberries maintain peak flavor for 3–4 weeks post-roast. Grind immediately before brewing to preserve volatile aromatics.

Origin & Region

Kona Peaberry coffee originates from the volcanic slopes of Mauna Loa on the Big Island of Hawaii, specifically from the Kona district on the western side. This elevated region, situated between 2,000 and 4,000 feet above sea level, benefits from a unique microclimate shaped by trade winds and afternoon cloud cover that provides natural shade during the hottest hours.

The terroir is defined by Hawaii's rich volcanic heritage. The dark, mineral-dense lava soils are porous and well-draining, allowing water to penetrate deeply while preventing waterlogging. These soils are naturally rich in potassium, magnesium, and other minerals that coffee plants absorb, contributing to the bean's distinctive flavor profile. The volcanic rock also retains heat, moderating temperature fluctuations and creating ideal growing conditions year-round.

Peaberries are a natural mutation where a coffee cherry develops a single, rounded bean instead of the typical two flat seeds. In Kona, this rare occurrence is celebrated for producing a more concentrated flavor, often exhibiting brighter acidity and more complex aromatics than standard beans.

The Kona region's lush landscape is shaped by volcanic activity and tropical rainfall, creating verdant hillsides where coffee plants thrive alongside native Hawaiian vegetation. The combination of mineral-rich soil, elevation, consistent moisture, and careful cultivation practices has established Kona as one of the world's most sought-after coffee origins, with a protected designation that ensures authenticity and quality.

Altitude & Processing

2,000-3,500 ft Altitude

Kona peaberries are cultivated on the volcanic slopes of Mauna Loa and Hualalai at elevations between 2,000 and 3,500 feet, where the rich volcanic soil, consistent cloud cover, and cool mountain air create ideal conditions for specialty coffee development. This altitude range slows the ripening process, allowing the beans to develop complex flavor profiles and dense cellular structure.

Our peaberries are harvested exclusively by hand during the peak season, with experienced farmers selectively picking only the ripest cherries. Each cherry is processed using traditional wet-mill methods—depulped by hand-cranked equipment, fermented in small batches to develop clarity and sweetness, and dried on raised beds under the Hawaiian sun. This labor-intensive approach preserves the delicate characteristics that define single-origin Kona coffee, with no mechanical sorting or industrial processing that would compromise quality or terroir expression.

The Peaberry

Everything you want to know

Peaberry bean, the difference

The Peaberry is a naturally occurring coffee variant that develops when a single bean, rather than the typical pair, matures within the cherry. Representing approximately 5–10% of any coffee harvest, Peaberries are notably smaller—roughly one-third the size of standard beans—yet deliver a distinctly concentrated flavor profile. This singular development concentrates the cherry's nutrients into one seed, resulting in a more intense, complex cup with pronounced body and boldness. Peaberries are prized by specialty coffee enthusiasts for their unique characteristics and are often sorted and offered as a premium selection within single-origin lots.

Peaberry Purity

Kona Peaberry: Purity

The Kona peaberry represents coffee in its most refined form. These naturally occurring beans—comprising roughly 5% of any harvest—are the result of a single seed developing within the coffee cherry rather than the typical pair. This singular growth creates a bean of exceptional density and concentration, a phenomenon unique to the volcanic soils and microclimate of Kona's slopes.

What emerges is purity of expression. The peaberry's compact structure and elevated mineral content reflect the terroir with uncommon clarity. Each cup carries the unmistakable signature of Kona's elevation, volcanic minerality, and the careful stewardship required to cultivate coffee at this level. There is no compromise in the cup—only the direct translation of origin into flavor.

The innocence lies in simplicity. A peaberry asks nothing of the roaster but respect for its inherent character. Light to medium roasts preserve the bean's natural brightness and floral undertones. The result is coffee stripped of artifice: clean, transparent, and honest. What you taste is what the land and season have given.

This is coffee as terroir, unadorned and complete.

History of the Peaberry

Peaberry beans are a natural mutation of the coffee cherry, occurring in roughly 5–10% of harvests. Instead of the typical two flat seeds, a peaberry develops as a single, small, rounded bean—the result of one seed aborting during fruit development. This genetic variation has been documented across coffee-growing regions for centuries, though it was largely sorted out and discarded until specialty coffee producers recognized its distinct flavor profile.

In the mid-20th century, peaberries began gaining recognition among coffee enthusiasts and roasters. The smaller, denser bean was found to roast more evenly and develop concentrated, often brighter acidity and more pronounced fruit and floral notes compared to flat beans from the same harvest. Kenyan and Tanzanian peaberries became particularly prized, followed by Hawaiian Kona peaberries, which command premium prices due to their rarity and quality.

Today, peaberries are sorted and sold separately as a specialty grade, commanding a significant price premium. They remain a marker of quality and intentionality in specialty coffee, valued by roasters and consumers who appreciate their unique characteristics and the care required to identify and process them.
